  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 8 ounces block feta cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 10 ounces pasta (such as penne or fusilli)
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Place the cherry tomatoes in a baking dish and drizzle with olive oil. Season with salt and pepper, and toss to coat.
  2. Place the block of feta cheese in the center of the baking dish, surrounded by the tomatoes. Sprinkle the minced garlic, dried oregano, and dried basil over the top.
  3. Bake in the preheated oven for 30-35 minutes, until the tomatoes are bursting and the feta is golden and melted.
  4. While the feta and tomatoes are baking, cook the pasta according to the package instructions. Drain and set aside.
  5. Remove the baking dish from the oven and use a fork to mash the tomatoes and feta together, creating a creamy sauce. Toss the cooked pasta with the tomato-feta mixture until well coated.
  6. Stir in the chopped fresh basil and red pepper flakes, if using.
  7. Serve immediately, garnished with additional fresh basil if desired.
