- 2 cups cherry tomatoes
- 1/4 cup olive oil
- Salt and pepper to taste
- 8 ounces block feta cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 10 ounces pasta (such as penne or fusilli)
- 1/4 cup fresh basil, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C). Place the cherry tomatoes in a baking dish and drizzle with olive oil. Season with salt and pepper, and toss to coat.
- Place the block of feta cheese in the center of the baking dish, surrounded by the tomatoes. Sprinkle the minced garlic, dried oregano, and dried basil over the top.
- Bake in the preheated oven for 30-35 minutes, until the tomatoes are bursting and the feta is golden and melted.
- While the feta and tomatoes are baking, cook the pasta according to the package instructions. Drain and set aside.
- Remove the baking dish from the oven and use a fork to mash the tomatoes and feta together, creating a creamy sauce. Toss the cooked pasta with the tomato-feta mixture until well coated.
- Stir in the chopped fresh basil and red pepper flakes, if using.
- Serve immediately, garnished with additional fresh basil if desired.
