- 6 medium potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or dairy-free alternative)
- 1 cup heavy cream (or coconut cream)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become translucent and fragrant.
- Add the diced potatoes to the pot and stir to combine. Cook for about 5 minutes, allowing the potatoes to start softening.
- Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot, and let it cook for about 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
- Stir in the milk and heavy cream, and season the soup with salt and black pepper to taste. Let it cook for an additional 5 minutes, allowing the flavors to meld together.
- Serve the potato soup hot, garnished with fresh chopped parsley.
