  • 6 medium potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or dairy-free alternative)
  • 1 cup heavy cream (or coconut cream)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become translucent and fragrant.
  2. Add the diced potatoes to the pot and stir to combine. Cook for about 5 minutes, allowing the potatoes to start softening.
  3. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot, and let it cook for about 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  5. Stir in the milk and heavy cream, and season the soup with salt and black pepper to taste. Let it cook for an additional 5 minutes, allowing the flavors to meld together.
  6. Serve the potato soup hot, garnished with fresh chopped parsley.
