- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup unsalted butter, melted and slightly cooled
- ¾ cup plain Greek yogurt (or sour cream)
- 2 large eggs
- 2 tsp vanilla extract
- ¼ cup milk (any variety)
For the Streusel Topping:
- ⅓ cup light brown sugar, packed
- ⅓ cup all-purpose flour
- 1 tsp ground cinnamon
- 3 tbsp unsalted butter, cold and cubed
For the Glaze (optional):
- ½ cup powdered sugar
- 1–2 tsp milk
- ¼ tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with 12 paper liners.
- In a small bowl, make the streusel by combining brown sugar, flour, and cinnamon. Add cold butter and use a fork or your fingers to blend into a crumbly texture. Set aside.
- In a large mixing bowl, whisk together flour, both sugars, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix melted butter, Greek yogurt, eggs, vanilla, and milk until smooth.
- Pour the wet ingredients into the dry and stir until just combined—do not overmix.
- Divide the batter evenly into the prepared muffin cups, filling about ¾ of the way.
- Generously sprinkle the streusel topping over each muffin.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
- If desired, mix glaze ingredients and drizzle over cooled muffins before serving.
