  • ½ cup granulated sugar

  • 2 tsp baking powder
  • ½ tsp baking soda

  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup plain Greek yogurt (or sour cream)
  • 2 large eggs
  • 2 tsp vanilla extract
  • ¼ cup milk (any variety)

For the Streusel Topping:

  • ⅓ cup light brown sugar, packed
  • ⅓ cup all-purpose flour
  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter, cold and cubed

For the Glaze (optional):

  • ½ cup powdered sugar
  • 12 tsp milk
  • ¼ tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with 12 paper liners.
  2. In a small bowl, make the streusel by combining brown sugar, flour, and cinnamon. Add cold butter and use a fork or your fingers to blend into a crumbly texture. Set aside.
  3. In a large mixing bowl, whisk together flour, both sugars, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, mix melted butter, Greek yogurt, eggs, vanilla, and milk until smooth.
  5. Pour the wet ingredients into the dry and stir until just combined—do not overmix.
  6. Divide the batter evenly into the prepared muffin cups, filling about ¾ of the way.
  7. Generously sprinkle the streusel topping over each muffin.
  8. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  10. If desired, mix glaze ingredients and drizzle over cooled muffins before serving.
