Ingredients
-
1 cup (2 sticks) unsalted butter, softened
-
1 cup brown sugar, packed
-
1 cup granulated sugar
-
2 large eggs
-
1 ½ tsp vanilla extract
-
2 cups all-purpose flour
-
1 tsp baking powder
-
1 tsp baking soda
-
½ tsp ground cinnamon
-
½ tsp salt
-
2 cups old-fashioned rolled oats
-
1 ½ cups semi-sweet chocolate chips
-
1 cup unsweetened shredded coconut
-
1 cup chopped walnuts (or pecans for a milder flavor)
Instructions
-
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
-
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
-
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
-
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Fold in the oats, chocolate chips, shredded coconut, and chopped nuts.
-
Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, leaving about 2 inches between each.
-
Bake for 10–12 minutes or until the edges are golden and the centers look just set.
-
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
