  • 1 packet (1 oz) onion soup mix
  • 1 cup shredded mozzarella or provolone cheese
  • 1 cup seasoned breadcrumbs
  • 2 eggs, beaten
  • 1/3 cup milk (dairy or unsweetened plant-based)
  • 1/2 cup finely chopped onions
  • 2 tbsp Worcestershire sauce (or coconut aminos for a soy-free option)
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional for garnish)
  • 1/4 cup ketchup (for topping)
  • 1/4 cup shredded cheese (for topping)

Instructions

  1. In a large bowl, combine ground beef, onion soup mix, breadcrumbs, eggs, milk, chopped onions, Worcestershire sauce, black pepper, and 1 cup of shredded cheese. Mix gently until just combined—do not overmix.
  2. Shape the meat mixture into a loaf form. Place it in the center of a large piece of aluminum foil and fold the edges to create a cradle. Transfer the foil-wrapped loaf into the crockpot insert.
  3. Spread the ketchup over the top of the meatloaf and sprinkle with the remaining cheese.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
  5. Carefully lift the meatloaf out of the crockpot using the foil and let it rest for 5–10 minutes before slicing.
