- 2 lbs lean ground beef (or ground turkey for a lighter option)
- 1 packet (1 oz) onion soup mix
- 1 cup shredded mozzarella or provolone cheese
- 1 cup seasoned breadcrumbs
- 2 eggs, beaten
- 1/3 cup milk (dairy or unsweetened plant-based)
- 1/2 cup finely chopped onions
- 2 tbsp Worcestershire sauce (or coconut aminos for a soy-free option)
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional for garnish)
- 1/4 cup ketchup (for topping)
- 1/4 cup shredded cheese (for topping)
Instructions
- In a large bowl, combine ground beef, onion soup mix, breadcrumbs, eggs, milk, chopped onions, Worcestershire sauce, black pepper, and 1 cup of shredded cheese. Mix gently until just combined—do not overmix.
- Shape the meat mixture into a loaf form. Place it in the center of a large piece of aluminum foil and fold the edges to create a cradle. Transfer the foil-wrapped loaf into the crockpot insert.
- Spread the ketchup over the top of the meatloaf and sprinkle with the remaining cheese.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
- Carefully lift the meatloaf out of the crockpot using the foil and let it rest for 5–10 minutes before slicing.
- Garnish with fresh parsley and serve with mashed potatoes, roasted veggies, or a green salad.
