- ½ cup (1 stick) unsalted butter
- 3 ripe bananas, mashed
- ¾ cup light brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon (optional)
- ¼ cup plain Greek yogurt or sour cream (for moisture)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a small saucepan, melt the butter over medium heat. Stir frequently until the butter foams, then turns golden brown and smells nutty. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the mashed bananas and brown sugar until combined. Add the browned butter, eggs, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet mixture and stir until just combined. Fold in the Greek yogurt and optional nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice, serve warm, or toast lightly for an extra treat!
