- 1 cup (2 sticks) unsalted butter
- 1 ½ cups granulated sugar
- ¼ cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- Extra sugar for rolling (optional)
Instructions
- Start by browning the butter: In a medium saucepan over medium heat, melt the butter. Continue to cook, stirring frequently, until it foams and begins to turn golden with brown bits forming at the bottom—this takes about 5–7 minutes. Remove from heat and let cool for 10–15 minutes.
- In a large bowl, whisk together the granulated sugar, brown sugar, and browned butter until smooth and slightly thickened.
- Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until fully combined.
- Cover the dough and chill in the refrigerator for at least 1 hour (or up to overnight) to enhance flavor and texture.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop tablespoon-sized balls of dough and roll in granulated sugar if desired. Place them 2 inches apart on the prepared baking sheets.
- Bake for 9–11 minutes, or until the edges are set and the centers are slightly soft. Don’t overbake!
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
