- 2 tablespoons soy sauce (for gluten-free, use tamari)
- 1 tablespoon sesame oil
- 1 tablespoon brown sugar or honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, freshly grated
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
- 1 teaspoon gochugaru (Korean chili flakes) or chili flakes, optional for heat
- 2 tablespoons gochujang (Korean chili paste)
- 2 cups cooked rice (preferably short-grain or jasmine)
- 1 cup spinach, sautéed
- 1 small carrot, julienned
- 1/2 cucumber, julienned
- 1/4 cup kimchi (optional)
- 4 eggs (fried sunny-side up)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Marinate the Beef: In a bowl, combine soy sauce, sesame oil, brown sugar, garlic, ginger, rice vinegar, sesame seeds, and gochujang. Add the thinly sliced beef and mix well. Let it marinate for at least 30 minutes to allow the flavors to infuse.
- Prepare the Vegetables: While the beef marinates, sauté the spinach with a little sesame oil until wilted. Set aside. Prepare the carrot and cucumber by julienning them into thin strips. If you’re using kimchi, have it ready for serving.
- Cook the Beef: Heat a large skillet or grill pan over medium-high heat. Add the marinated beef and cook for about 3-4 minutes, stirring occasionally until the beef is cooked through and slightly caramelized.
- Fry the Eggs: In a separate pan, heat a small amount of vegetable oil over medium heat. Crack the eggs into the pan and fry them sunny-side up, keeping the yolks intact. Season with a pinch of salt and pepper.
- Assemble the Bibimbap: In each serving bowl, place a generous scoop of cooked rice at the bottom. Arrange the sautéed spinach, julienned carrots, cucumbers, and kimchi on top of the rice. Add the cooked bulgogi beef in the center and top with the fried egg.
- Serve: Drizzle a bit more sesame oil over the top, and if you like a bit of extra spice, add some more gochujang. Mix everything together before eating for the best flavor.
