  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth (or chicken broth for non-vegetarian)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice (optional, for added flavor)
  • Fresh parsley for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic, cooking until softened, about 3-4 minutes.
  • Add the chopped cabbage, carrots, and potatoes to the pot. Stir to combine.
  • Pour in the vegetable broth, and add the diced tomatoes, thyme, oregano, bay leaf, salt, and pepper.
  • Bring the soup to a boil, then reduce the heat to low. Let the soup simmer for 25-30 minutes or until the vegetables are tender.
  • Adjust seasoning with salt and pepper to taste. If you like, stir in a tablespoon of fresh lemon juice to brighten the flavors.
