- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth (or chicken broth for non-vegetarian)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice (optional, for added flavor)
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic, cooking until softened, about 3-4 minutes.
- Add the chopped cabbage, carrots, and potatoes to the pot. Stir to combine.
- Pour in the vegetable broth, and add the diced tomatoes, thyme, oregano, bay leaf, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low. Let the soup simmer for 25-30 minutes or until the vegetables are tender.
- Adjust seasoning with salt and pepper to taste. If you like, stir in a tablespoon of fresh lemon juice to brighten the flavors.
