- 1 medium cauliflower, cut into florets
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup beef broth (or vegetable broth for a lighter option)
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/2 tsp chili flakes (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the cauliflower: In a large pot, bring water to a boil and blanch the cauliflower florets for about 3-4 minutes until slightly tender. Drain and set aside.
- Cook the beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if needed.
- Sauté vegetables: Add chopped onion and garlic to the skillet with the beef, sautéing for 3-4 minutes until the onion softens and becomes translucent.
- Add spices and broth: Stir in cumin, paprika, cinnamon, chili flakes, salt, and pepper. Pour in the diced tomatoes and beef broth. Stir to combine.
- Combine cauliflower and beef: Add the blanched cauliflower florets to the skillet, stirring to incorporate everything. Simmer for 10-15 minutes, allowing the flavors to meld and the cauliflower to soften.
- Serve: Garnish with fresh parsley and serve hot. Enjoy with a side of rice, quinoa, or a fresh green salad.
