  • 1 lb (450g) turkey sausage or chicken sausage, casings removed
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 cup (120g) tomato sauce
  • 1 tbsp tomato paste
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup (120g) shredded mozzarella (optional)

Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Drain and set aside.
  • Prepare the sausage: Heat olive oil in a large skillet over medium heat. Add the turkey or chicken sausage, breaking it into crumbles. Cook for about 5-7 minutes until browned. Remove excess fat if needed.
  • Sauté the aromatics: Add the chopped onion and cook for 2-3 minutes until soft. Stir in the garlic, red pepper flakes, and Italian seasoning. Sauté for another 30 seconds until fragrant.
  • Create the sauce: Pour in the tomato sauce, tomato paste, and chicken broth. Stir well and let it simmer for 3-4 minutes. Then, add the heavy cream and Parmesan cheese, stirring until the sauce is smooth and creamy. Season with salt and pepper.
  • Combine pasta and sauce: Add the cooked rigatoni to the skillet and toss until fully coated. If using mozzarella, sprinkle it over the top and let it melt.
