  • 1 whole chicken (about 4 pounds)
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup apple cider vinegar (substitute for wine)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels. Place the chicken in a roasting pan.
  3. Rub the chicken with olive oil. Squeeze the lemon halves over the chicken, then place the lemon halves inside the cavity of the chicken.
  4. In a small bowl, combine the minced garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture all over the chicken.
  5. Pour the chicken broth and apple cider vinegar into the bottom of the roasting pan.
  6. Roast the chicken in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy. Baste the chicken with the pan juices every 30 minutes.
  7. Let the chicken rest for 10 minutes before carving. Serve with the pan juices drizzled on top.
