Ingredients

  • 2 cups all-purpose flour (or 1 ¾ cups flour + ¼ cup semolina)
  • 2 large eggs
  • 1 tbsp olive oil
  • ¼ tsp salt
  • 2 tbsp water (if needed)

For the Sauce:

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • ½ cup grated Parmesan (or nutritional yeast for vegan option)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • Fresh basil for garnish

Instructions

Make the Pasta Dough: On a clean surface, form a mound with the flour and make a well in the center. Add the eggs, olive oil, and salt. Using a fork, gradually incorporate the flour into the wet ingredients. Knead for 8–10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Roll & Shape: Roll the dough into a thin sheet and cut into 1-inch squares. Use a gnocchi board or the back of a fork to roll each square into a tube, sealing the edges. Let them dry for 15 minutes.

Prepare the Sauce: In a pan, heat olive oil over medium heat. Sauté the onion until translucent, then add the garlic and cook for 30 seconds. Add cherry tomatoes, season with salt, and cook for 5 minutes until softened.

Cook the Pasta: Boil water with salt. Cook garganelli for 2–3 minutes or until they float. Reserve ½ cup pasta water before draining.

Combine & Serve: Add the cooked pasta to the sauce along with heavy cream, Parmesan, and reserved pasta water as needed. Toss to coat, cook for 2 minutes, then garnish with fresh basil. Serve immediately.
