Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup olive oil (for frying)
- 1 cup marinara sauce
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- In a shallow dish, mix the flour, garlic powder, onion powder, salt, and pepper. In another dish, beat the eggs. In a third dish, combine panko breadcrumbs and Parmesan cheese.
- Dredge each chicken breast in the flour mixture, then dip into the beaten eggs, and finally coat with the panko-Parmesan mixture. Press the breadcrumbs lightly to ensure an even coating.
- Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes on each side, or until golden brown and crispy. Remove the chicken from the skillet and place it on the prepared baking sheet.
- Spoon a tablespoon of marinara sauce on top of each chicken breast and sprinkle with shredded mozzarella cheese.
- Bake for 10-12 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
