Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • 1 cup roasted unsalted peanuts
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  • Prepare the workspace: Line a baking sheet with parchment paper or a silicone mat and set aside. Keep all ingredients measured and ready, as the process moves quickly.
  • Make the caramel: In a heavy-bottomed saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves, then stop stirring. Let the mixture boil until it reaches 300°F (hard crack stage) on a candy thermometer.
  • Add the peanuts: Stir in the peanuts, letting them coat evenly in the caramelized sugar. Cook for another 1–2 minutes until golden brown.
  • Incorporate the butter and vanilla: Remove from heat and quickly stir in the butter, vanilla extract, salt, and baking soda. The mixture will foam—this is normal and creates a light, airy texture.
  • Spread the brittle: Immediately pour the mixture onto the prepared baking sheet. Use a spatula to spread it into an even layer, working quickly before it hardens.
  • Cool and break: Let the brittle cool completely at room temperature for about 30 minutes. Once hardened, break into pieces and enjoy!
