  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • ½ cup beef broth (or vegetable broth for a lighter option)
  • 1 tbsp oyster sauce (or hoisin sauce for a vegetarian option)
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for spice)
  • 1 tsp brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
  • Cooked white rice or noodles, for serving

Instructions

  • Marinate the Beef: In a bowl, toss the sliced steak with cornstarch and soy sauce. Let it sit for 10 minutes while you prep the vegetables.
  • Sear the Beef: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2-3 minutes per side until browned. Remove from the pan and set aside.
  • Sauté the Veggies: Add the remaining oil to the pan. Stir-fry the bell peppers, onion, garlic, and ginger for 2-3 minutes until slightly tender but still crisp.
  • Prepare the Sauce: In a small bowl, whisk together the beef broth, oyster sauce, rice vinegar, black pepper, red pepper flakes, and brown sugar.
  • Combine Everything: Return the beef to the pan. Pour the sauce over the mixture and stir well. Simmer for 2 minutes.
  • Thicken the Sauce: Add the cornstarch slurry, stirring constantly, until the sauce thickens. Cook for another minute.
