- 1-inch piece ginger, grated

- 1 tbsp oyster sauce (or hoisin sauce for a vegetarian option)
- 1 tbsp rice vinegar (or apple cider vinegar)
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional, for spice)
- 1 tsp brown sugar
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)

Instructions
- Marinate the Beef: In a bowl, toss the sliced steak with cornstarch and soy sauce. Let it sit for 10 minutes while you prep the vegetables.
- Sear the Beef: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2-3 minutes per side until browned. Remove from the pan and set aside.
- Sauté the Veggies: Add the remaining oil to the pan. Stir-fry the bell peppers, onion, garlic, and ginger for 2-3 minutes until slightly tender but still crisp.
- Prepare the Sauce: In a small bowl, whisk together the beef broth, oyster sauce, rice vinegar, black pepper, red pepper flakes, and brown sugar.
- Combine Everything: Return the beef to the pan. Pour the sauce over the mixture and stir well. Simmer for 2 minutes.
- Thicken the Sauce: Add the cornstarch slurry, stirring constantly, until the sauce thickens. Cook for another minute.
