- 200 g fresh ramen noodles or instant ramen (discard seasoning packet)
- 4 cups low-sodium chicken or vegetable broth
- 2 garlic cloves (minced)
- 1 tbsp grated ginger
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1/2 tsp red chili flakes (optional)
- 1 cup fresh spinach or bok choy (washed)
- 1/2 cup sliced mushrooms (shiitake or button)
- 2 soft-boiled eggs (halved)
- 1 green onion (thinly sliced)
- Sesame seeds for garnish (optional)
Instructions
- In a medium pot, heat sesame oil over medium heat. Add garlic, ginger, and chili flakes (if using) and sauté until fragrant, about 1 minute.
- Pour in the chicken or vegetable broth and soy sauce. Bring the mixture to a simmer.
- Add mushrooms and cook for 3-5 minutes until tender. Add the ramen noodles and cook according to package instructions (usually 2-3 minutes). Stir in the spinach or bok choy during the last minute of cooking.
- Divide the ramen into bowls. Top each serving with half a soft-boiled egg, sliced green onions, and a sprinkle of sesame seeds. Serve hot and enjoy!
