  • 4 cups low-sodium chicken or vegetable broth
  • 2 garlic cloves (minced)
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp red chili flakes (optional)
  • 1 cup fresh spinach or bok choy (washed)
  • 1/2 cup sliced mushrooms (shiitake or button)
  • 2 soft-boiled eggs (halved)
  • 1 green onion (thinly sliced)
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium pot, heat sesame oil over medium heat. Add garlic, ginger, and chili flakes (if using) and sauté until fragrant, about 1 minute.
  2. Pour in the chicken or vegetable broth and soy sauce. Bring the mixture to a simmer.
  3. Add mushrooms and cook for 3-5 minutes until tender. Add the ramen noodles and cook according to package instructions (usually 2-3 minutes). Stir in the spinach or bok choy during the last minute of cooking.
  4. Divide the ramen into bowls. Top each serving with half a soft-boiled egg, sliced green onions, and a sprinkle of sesame seeds. Serve hot and enjoy!
