  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets nori (seaweed)
  • 1/2 lb sushi-grade tuna (or cooked shrimp for substitution)
  • 1/2 avocado, thinly sliced
  • 1/2 cucumber, julienned
  • 1/4 cup cream cheese (optional for a creamy texture)
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rice and water. Bring it to a boil, then reduce heat to low, cover, and simmer for about 18 minutes. Remove from heat and let it sit, covered, for another 10 minutes.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the cooked rice and gently fold it in. Allow the rice to cool to room temperature.
  3. Lay a sheet of nori, shiny side down, on a bamboo sushi mat. Spread a thin layer of rice over the nori, leaving about 1 inch at the top.
  4. Arrange the sushi-grade tuna, avocado slices, cucumber, and cream cheese (if using) horizontally along the middle of the rice.
  5. Roll the sushi tightly from the bottom using the sushi mat to guide you, then moisten the top edge with a little water to seal the roll.
  6. Using a sharp knife, slice the sushi roll into bite-sized pieces. Repeat the process with the remaining ingredients.
  7. Serve with soy sauce, pickled ginger, and wasabi on the side.
