Description

  • 2 cups bulgur wheat
  • 1 lb ground beef or lamb (substitute with ground chicken for dietary preference)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cinnamon
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 cup crushed tomatoes
  • 2 tbsp tomato paste
  • 1 ½ cups vegetable or beef broth
  • ½ cup chopped fresh parsley
  • Juice of 1 lemon
  • ½ cup toasted pine nuts (optional)

Instructions

  1. Rinse the bulgur wheat under cold water and soak it in warm water for 15 minutes. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until soft and fragrant.
  3. Add the ground meat (or chicken) and cook until browned. Stir in cumin, coriander, cinnamon, black pepper, and salt.
  4. Pour in the crushed tomatoes, tomato paste, and broth. Mix well and bring to a simmer.
  5. Stir in the soaked bulgur wheat and let it cook, covered, for about 15–20 minutes, or until the liquid is absorbed and the bulgur is tender.
  6. Remove from heat, stir in fresh parsley, lemon juice, and toasted pine nuts if using. Let it rest for 5 minutes before serving
