- 2 cups bulgur wheat
- 1 lb ground beef or lamb (substitute with ground chicken for dietary preference)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cinnamon
- ½ tsp black pepper
- 1 tsp salt
- 1 cup crushed tomatoes
- 2 tbsp tomato paste
- 1 ½ cups vegetable or beef broth
- ½ cup chopped fresh parsley
- Juice of 1 lemon
- ½ cup toasted pine nuts (optional)
Instructions
- Rinse the bulgur wheat under cold water and soak it in warm water for 15 minutes. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until soft and fragrant.
- Add the ground meat (or chicken) and cook until browned. Stir in cumin, coriander, cinnamon, black pepper, and salt.
- Pour in the crushed tomatoes, tomato paste, and broth. Mix well and bring to a simmer.
- Stir in the soaked bulgur wheat and let it cook, covered, for about 15–20 minutes, or until the liquid is absorbed and the bulgur is tender.
- Remove from heat, stir in fresh parsley, lemon juice, and toasted pine nuts if using. Let it rest for 5 minutes before serving
