- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp almond extract (optional)
- Royal icing (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract (if using) to the butter mixture, and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough in half and wrap each portion in plastic wrap. Chill in the refrigerator for at least 30 minutes.
- Roll out the dough on a lightly floured surface to about ¼ inch thickness. Use cookie cutters to shape the dough into baby-themed designs such as onesies, baby bottles, and pacifiers.
- Place the cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
- Once cooled, decorate the cookies with royal icing to your desired design.
